Peppermint Brownie Cupcakes with Pink Peppermint Frosting



Doing some xmas shopping...I ran into this can o' brownies...love the packaging...at Williams Sonoma. Such great appeal...peppermint brownies. Yum! Of course, I bought the mix!



Here's a photo if you want to buy it...all the ingredients are in the can...except the butter and eggs.


Then, I made peppermint frosting and threw in crushed candy canes! They colored the frosting pink!




Found these little xmas balls at Michaels a while ago...thinking about putting them on my cupcakes. They worked perfectly. I also thought it would be fun to have some frosting on the side to add to the cupcake...after you eat the frosting! A little pot au glaçage!




Layla got to taste some of the mint frosting!

Amanda's Birthday: Chocolate and Vanilla Cupcakes!

Monday was Amanda's birthday! She really likes both chocolate and vanilla cupcakes with vanilla and/or chocolate frosting! So easy!

I suspended the Candy Series and only added mini chocolate chips to the chocolate cupcakes!

I'm a little behind with posting the third cupcake in the Candy Cupcakes Series...Junior Mint Vanilla Cupcakes with Vanilla Mint Frosting...suggested by Prissy Cook....Happy Late Birthday, Prissy Cook!! Work has been so crazy the past two weeks....it was all I could do to get them made! And,they were good...but not necessarily my favorite. That would be the Junior Mint one below! But, if you like peanuts, you will love it!

I know this sounds crazy...but I do love Junior Mints. I remember always getting them at the movies and then dumping the entire box in my coke! How can I be tell you this?? Then I would eat frozen Junior Mints for most of the movie! I can still remember how good they were! N-E-WAZ: This is how they looked when they came out of the oven....

The cupcake was vanilla with mini chocolate chips and coconut and small bites of Mounds Bar mixed in the batter. The frosting was vanilla mint with pieces of Mounds Bar on top. OMG! They were awesome.

Oh Baby--Baby Ruth Chocolate Cupcakes!


Yes, it's true I am on a candy cupcake trip...this week's entry is the Baby Ruth Chocolate Cupcake with vanilla frosting topped with bits of frozen Baby Ruth bits! Whew!

N E Wayz: These Are Milky Wayz Cupcakes!



Before I discuss these lovely cupcakes, I must tell you about my week....Our office...at the University of Maryland...has been working on a six-month-long project to introduce the new School of Public Health (formerly the College of Health and Human Performance) here on campus. Finally, on Wednesday, the new school was officially launched, and we all went over for the big event. It was amazing! My colleague, Peggy, and I had spent the last week and a good part of the weekend moving the old web site over to the new web site, checking to be sure that everything was working right, and making the new site live! We designed the site new several weeks ago.

Then, last night we went to see Rhodessa Jones who was performing at the Clarice Smith Performing Arts Center on campus. I had met Rhodessa earlier this month at another event on campus and I worked in her web site about her Artist-In_Residence here for the month of September. She is such an amazing person (she's on the left) and I was so excited that we got tickets for her performance...all three nights are sold out! Check out her web site here: culturalodyssey.org/.

Okay...on to cupcakes...these are Milky Wayz cupcakes...made with melted Milky Ways bars! I made up the batter from a cupcake mix and while I was doing that I was melting a bag of little Milky Ways bar over a double boiler...running back and forth between the two processes...when the bars were stirred and melted, I dribbled the Milky Way ooze into the center of each cupcake!



Here is Layla checking out the cupcakes the next morning. She's so sleepy she didn't even try to lick them! Back to cupcakes: in the meantime, I had been freezing a couple of the bars and I got them out of the freezer after the cupcakes had cooled off. I made chocolate frosting and then shaved off some of the Milky Way bar to add to the top of the frosting....yummmmmmy! These tasted really good...the Milky Way ooze actually was chewy and crispy...it all fell to the bottom of the cupcake to form a delicious treat!

Woof! It's Nigel's First Birthday Cupcakes!


We had a doggie birthday at our house this week...Nigel's first birthday. He invited two friends...Chuck and Harry...and, of course, Layla, his big sister!


I made them Billy's Vanilla Vanilla Cupcakes with Vanilla Vanilla Frosting! And, they all loved the cupcakes.

Layla loves the birthday parties...anybody's birthday party is okay with her!


Let me tell you about Nigel...who is a french bulldog...He loves his job. He should...he made it up all by himself...He refers to himself as the Yard Manager...and he does his best to protect us from chipmonks, birds of all kinds, and any other critter that happens into our yard. He takes this job very seriously, marching/running out the door...checking every corner the yard looking to spot untoward activity. He quickly follows up on every lead...which may mean sticking his head in a nice hole he's located!

Thank goodness Nigel recognizes when it's time for the Yard Manager to take a well-deserved break. This is hard work for a 1-year-old!

Last week The Prissy Cook helped me with this huge, huge, huge problem I had setting up hosting for a web site I've been working on for a "secret" client. She solved my problem seemingly with a "virtual" snap of her fingers, and I told her I'd make her some "virtual" cupcakes....sort of a present...an early Christmas present!

Layla thought these looked good enough to eat! In fact, Layla spent quality kitchen time with me while I...I mean we...made and decorated the cupcakes. I used a Duncan Hines White Cake Mix...and added a cup of coconut to it. As soon, as we had them in oven, Layla left the kitchen! Then an hour later, she showed up again to help me decorate and photograph the goods! his dog is a cupcake foodie!

We used Duncan Hines Coconut Pecan Frosting. It was delish! I added more coconut to the top!

Laura's son...James...completed his last exam before graduating from college this week and these are his cupcakes! What a celebration we had...I made one cupcake with a scared face...before the final exam...and one with a happy face...that we saw when James walked in the door this afternoon.
