Week 16: Chocolate Cupcake with Pink Mint Frosting

This week I wanted to concentrate on the frosting part of the cupcake and to learn how to work with it to make the cupcake look cuter! The Chocolate Sour Cream Cupcakes, from cupcakes! by Elinor Klivans, that I made this week did not work out for me. They were so fragile that I couldn't put frosting on them. I'm sure that I messed something up, but then I had to think fast, so I used a chocolate cake mix to make the cupcakes you see here.

I did use her recipe for Peppermint Icing, with some embellishment. I wanted the frosting to be more stiff, so I added more confectioners' than she called for. The frosting turned out to be a lesson in the ultimate in decadence! You can eat it all by itself. The combination of the chocolate and the pink mint frosting did make for an outstanding cupcake.

    I had problems with that chocolate sour cream cupcake recipe as well when I was making the chocolate-covered hi-hats. I thought it was just because I maybe made an error in translating the measurements to metric, or maybe used some ingredient that wasn't quite the same over here. They were usable, just, but looked funny.

    Anyway, those pink frosted cupcakes look absolutely wonderful. Can't wait to try them myself. :)

    There's a little thing me and two girlfriends do when we're really happy (no, not that thing!). It's The Hot Pink Wiggle. This cupcake deserves a double wiggle and may become our signature dessert.

  10. I had problems with the frosting too. It came out very thin and was more like a glaze than anything. I tried to add more sugar too and it was still runny. Oh well, they are delicious though!
