Extra Curricular Mid-week Activity: Pancake Cupcakes

Okay...I know that you're going to think this is really crazy....but, tonight when I was picking up Turkey Hill Diet Iced Tea (which I am addicted to, btw) at Fresh Go, I was thinking about making some kind of cupcake to make that would be like an experiment. I was in the cake mix aisle and then I spotted pancake mixes...I was checking out the recipes on the box and thought WOW this might be fun to try out as a cupcake. Hmmmm...I didn't want to use a mix, though. So I picked up some Bisquick (probably the same thing, huh?). When I got home I made the pancake recipe for "lighter pancakes" that was on the box. Got out my cupcake pan. Put the batter in there and stuck them in the oven at 350 for about 12 minutes. It worked!

This is what they looked like right out of the oven. Pretty much like cupcakes! But, what about the taste? They even taste like pancakes...not right away...but just when you start you swallow a bite you get the pancake flavor. So, next I made some maple frosting out of confectioner's sugar, a little milk, maple sryup, maple flavoring, and a little vanilla. I mixed it all together and then put it in the microwave to melt it. I dipped each cupcake (the top of the cupcake) into the melted stuff and when it cooled, it hardened like maple candy. Awesome! My next thought was to put some bacon bits on top of it, but I held myself back from doing it. One cool thing about this is that they are very easy to make and doesn't everyone have Bisquick on hand? I, however, just thought that it was funny to make a cupcake out of a pancake!

I've posted more photos of these pancake cupcakes on my flickr account. Check it out!

(snicker) These make you wanna put on your flannel jammies, pour a big honkin glass of milk and settle in with a plateful. Ok, maybe not a plateful...

When the environment gets so bad that we have to live in subterranean caves and cook our meals with hot stones, I wanna make sure I have a box of Bisquick.

    Kudos to the Creative Queen!

this reminds me of a beloved relative who once used only bisquick to make "muffins" which tasted like salty pancakes and looked like cupcakes. this visual, textural and near-flavourless confusion made for one of my least favorite eating moments.
it's all in the set up (and correct bisquick instructions)though, these look like fun! they'd make a cute brunch addition

I wasn't too sure about this...but I put them in at 350 degrees for 10 minutes...then checked them and then left them in for 1-1/2 minutes more and they were done completely. I brought two of them into the office and both testers loved them. The maple topping does the trick!

Reminds me of this yummy cookbook I have called The Muffin Lady. Her muffins, cupcakes & quickbreads are based on a pancake batter recipe. Yours look delicious!

  7. Do you have any recipes for savory cupcakes? This one sounds like it would be good with a bacon and egg filling.

  8. Have you ever heard of Yorkshire Puddings? We eat them in the UK with our roast dinner. They are made from batter in a similar way... we pour gravy over them! Here's a link for you... http://www.bbc.co.uk/food/recipes/database/yorkshirepuddings_71853.shtml

I love what you did with your cupcakes!

I just got the Williams-Sonoma catalog, and inside is an ebelskiver pancake pan:

They're basically making cupcakes/pop-overs on the stove, and they fill it with a cinnamon sugar filling.
